A few years ago I was on the hunt for a dish to make for a Girl Scout pot luck supper. As I was looking through my mom’s recipe box I stumbled across the recipe entitled “Myron’s Teryaki Chicken”. I soon learned that Myron was my aunt’s boyfriend in college and he was from Hawaii. I then questioned why she hadn’t kept him around. Hawaiian connections would have been sweet. So anyways, I went out and bought the ingredients and made this delicious dish. The recipe is below.
Myron’s Teryaki Chicken (please file under “M” for Myron)
1 1/2 lbs + of chicken (boneless breasts)
1/2 cup brown sugar
1/2 cup soy sauce
1/4 cup rice wine
1/4 cup sherry
1/4 teaspoon garlic powder
1/4 teaspoon powdered ginger
1 heaping teaspoon of corn starch.
Mix everything but the chicken and the corn starch together. Cut up the pieces of chicken and add them to the sauce. Bring this all to a boil. Turn to low with a lid on and cook for 45 minutes. Remove the chicken. Dissolve corn starch in a 1/4 cup cold water and add it to the teryaki sauce. Bring it to a boil for a few minutes and then add the chicken back in.
Cook two batches of 3/4 cup of rice. Serve and enjoy!
Trust me, it is very delicious and because of Myron my family now has alcohol in the house (we aren’t drinkers).
